Mango Strawberry Popsicles

After making my mango margaritas last week I had a few remaining mangoes, so I thought, why not make some mango strawberry popsicles? The weather is warming up and strawberries are jumping into season.

This was evident on my last trip to Whole Foods with the supermarket entryway loaded with multiple tables of strawberries. In other words, strawberry heaven for all you strawberry lovers out there!

Popsicles are one of the easiest treats to make at home and perfect for all the spring and summertime outdoor festivities. I like making popsicles at home because I can ditch pretty much all the refined sugar. It’s amazing how much sugar is in store-bought popsicles and it’s so unnecessary given that fruit itself is so darn sweet.

Other popsicles I’ve made at home include these mixed berry popsicles and coconut chia mango popsicles. But with a hankering for strawberry popsicles, I thought I’d whip up this mango strawberry popsicle recipe.

Homemade Popsicle Tips

My only word of wisdom in making these popsicles is to truly wait at least 4 hours before trying to remove them from the popsicle mold. I was a little overzealous to photograph this recipe (and eat them), so I thought, “ahh, 3 hours is close enough” – especially as they looked frozen enough. Nope. When I tried to remove the popsicle it split in half as the mango center takes a bit longer to firm up. But good news, it refroze back together.

In terms of the recipe, you could also add lemon juice instead of lime, but trust me, lime juice perfectly complements these fruit flavors. Enjoy!

Mango Strawberry Popsicles

Description

These homemade mango strawberry popsicles are easy to make and the perfect frozen treat.

Ingredients 
 

  • 1 mango, peeled, pitted and sliced
  • 2 cups fresh strawberries, halved
  • 2 tbsp honey, or maple syrup
  • 2 tsp lime juice

Instructions 

  • Add the strawberries and one tablespoon honey plus one teaspoon lime juice to a food processor. Blend until you have a puree. Pour half the puree into the molds of your popsicle maker and pour the other half into a measuring cup.
  • Wash your food processor. Add the mango and one tablespoon honey and one tsp lime juice to the food processor. Blend until pureed, then pour evenly into the popsicle molds.
  • Add the remaining strawberry puree to the popsicle molds, then insert the popsicle sticks.
  • Freeze for at least 4 hours, though preferably overnight.

  1. These are so refreshing and perfect for summer! I had some less than pretty strawberries and mango that needed to be used up and thought this would be perfect, especially since it has been so hot. They are not only delicious but so pretty to look at, too! I can think of so many variations and look forward to making these again and again.5 stars
