Whisk together the coconut oil, honey, and vanilla. Then add the almond flour, coconut flour, and salt, and dig in with your hands to mix it into a dough.
STEP 1
Pour the dough into a parchment-lined pan and use your hands to press it firmly all the way to the edges and corners.

Preheat your oven to 350F and prebake the crust for about 15 minutes, until it's golden around the edges.

Make the filling by whisking together the eggs and honey. Then add the lemon juice and zest. Whisk again, and lastly add the tapioca flour and whisk again.

Remove the baked crust from the oven and pout the filling on top. Place it back in oven to bake for 20-25 minutes until cooked through.

Remove the pan from the oven and let them cook on the counter for one hour. Then chill in the fridge for 2 extra hours. Be patient!

Now, you're ready to slice into bars! And if you'd like, you can add a dusting of powdered sugar on top.
