ROASTED BROCCOLI with HOLLANDAISE

Preheat your oven to 425F. Remove and cut the florets into small pieces. Then toss them with olive oil, salt, and pepper on a baking sheet.
Pop the broccoli into the oven for 20 minutes, or until the edges are slightly browned.
Make the hollandaise sauce! First, melt the butter in the microwave for 1 minute. Then add everything but the butter to a blender.
As the blender is running, slowly stream in the butter from the top opening.
Toss in a handful of parsley and pulse a few times until it's combined. Make sure to not blend!
Pour the sauce into a small bowl. Then pull the broccoli out of the oven and place into a serving bowl.
Drizzle the hollandaise sauce over your roasted broccoli and you're ready to serve!
