Loaded With Vegetables
Aside from classic frittata ingredients, you'll need spring veggies, some cheese, and herbs.
Sauté all the veggies one by one in a large skillet. Then remove 1/3 of the veggies to a plate to add back on top later!
Make the egg mixture by whisking together the eggs, yogurt, salt, and pepper in a bowl.
Pour the egg mixture into the skillet and let it cook for 2-3 minutes.
Sprinkle the additional cooked veggies on top, dollop some goat cheese, and bake for 15-20 minutes.
