This zucchini soup is what I turn to for an easy addition to my summertime table.
It’s perfectly creamy, light, and a delicious way to enjoy the best of zucchini season!
Here’s what you’ll need to addbig flavors to an otherwise simple zucchini soup!
In a large saucepan, saute the
onion and garlic, with a dash of
salt and pepper.
STEP 1
Add the zucchini, broth, cashews, salt, and pepper. Bring everything to a boil, turn the heat to low, cover and simmer for 15 minutes until the zucchini is tender.
STEP 2
Add the chopped herbs and lemon juice, then use an immersion blender or high speed blender to blend the soup until it’s smooth and creamy.
STEP 3
Ladle into bowls. Then garnish with chopped herbs, and a drizzle of olive oil for the final touch.
