Pomegranate Guacamole (Holiday Festive!)
Pomegranate guacamole is a festive spin on one of my most loved recipes, guacamole! The vibrant red and green makes for a perfect holiday appetizer recipe.
Servings: 4 servings
- 3 avocados ripe
- 1/2 small red onion diced
- 1/4 cup fresh cilantro chopped
- 1 jalapeno pepper seeds removed and finely diced
- 2 garlic cloves minced
- 1 lime juiced
- 1/2 teaspoon sea salt
- 3/4 cup pomegranate seeds (divided)
Add all ingredients except the pomegranate seeds to a mixing bowl.
Use a fork to mash the ingredients together, until well combined.
Add 1/2 cup of the pomegranate seeds and stir together. Then transfer into a serving bowl.
Top with the remaining 1/4 cup of pomegranate seeds and an extra sprinkle of cilantro, for that red and green pop of color.
