- 4 medium zucchini
- 8 ounces cherry tomatoes
- 8 ounces buffalo mozzarella (small balls)
- 2/3 cup basil pesto
- toasted pine nuts
- fresh basil leaves
Cut the ends off each zucchini and use a spiralizer to create zucchini noodles. Place these into a large bowl.
Cut your tomatoes and mozarella balls in half. Place them in the bowl with the zucchini.
Add the pesto and mix all of the ingredients together until well combined. Top with garnishes and serve immediately.
