- 2 cups diced tomatoes
- 2 cups diced cucumber
- 1 cup orange bell pepper or any other color
- 1/4 cup diced red onion
- 1/3 cup finely chopped parsley
- 2 tbsp finely chopped mint
- 2 tbsp fresh lemon juice
- 1 tbsp olive oil
- salt and pepper to taste
- I love to let this salad sit in the fridge for at least an hour before serving, so that all the flavors meld together.
