Red Fruit Salad with Honeyed Yogurt

Strawberries, watermelon, raspberries and pomegranate seeds make for a juicy, sweet and delicious red fruit salad. A dollop of yogurt and drizzle of honey finishes it off.

Ingredients

  • 1 cup watermelon sliced into chunks
  • 1 cup strawberries sliced
  • 1 cup raspberries
  • 1 cup yogurt dairy, coconut or coconut whipped cream
  • 2 tbsp honey or maple syrup for vegan
  • 1/2 cup pomegranate seeds
  • mint leaves for garnish (optional)

Instructions

  • Place all the fruit in a medium-sized mixing bowl and mix together.
  • Divide the fruit evenly between two plates and top with the yogurt.
  • Drizzle the honey on top and sprinkle with pomegranate seeds. Add a mint leaf for garnish and serve immediately.
