This Israeli salad is a simple mix of tomatoes, cucumbers, bell pepper, red onion and fresh herbs. It's so easy, healthy and delicious you're gonna love it!

Ingredients

  • 2 cups diced tomatoes
  • 2 cups diced cucumber
  • 1 cup orange bell pepper or any color
  • 1/4 cup diced red onion
  • 1/3 cup finely chopped flat-leaf parsley
  • 2 tbsp finely chopped mint
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Add all of the ingredients to a mixing bowl and stir to combine.
  • Serve immediately or refrigerate for up to 2 days.
