Prime Rib Tacos

Prime rib tacos are a delicious way to enjoy any leftover prime rib. Just dice up the meat and pile it on tortillas with avocado slices, salsa, queso fresco, cilantro and lime juice!

Ingredients

  • 2 tortillas
  • 1 slice prime rib roast warmed
  • 1/2 avocado sliced
  • 2 tablespoons salsa
  • 3 tablespoons queso fresco
  • 2 tablespoons fresh cilantro leaves
  • 1/2 lime sliced

Instructions

  • Reheat your leftover prime rib in the microwave, until warmed through. Then dice it up.
  • Lay the tortilla flat on a plate and pile it with diced up prime rib, avocado slices, salsa, and queso fresco.
  • Sprinkle on cilantro leaves, and lime juice. Then enjoy!
