You guys, I couldn’t be more excited about today’s post. If you’ve been following me on Instagram, you’ve seen all the behind-the-scenes craziness that’s gone into making my first video.

Like prop staging (in the basement), herb buying (that took multiple trips) and figuring out how to shoot and edit a “professional” (though I still don’t consider myself a professional) recipe video. It’s been a week to say the least. But I did it…and I couldn’t be happier with my first video. Mainly, because well, it’s done!

This first video is part of an upcoming video series I’m working on called “healthy basics.” Think of these videos as “how to’s” with step-by-step instructions for simple recipes that build the foundation of healthy eating. I plan to shoot more advanced recipe videos as well, so if you’ve got something in mind that you’d like to see brought to life, let me know.

Today’s video is How to Make Coconut Whipped Cream – and it’s perfect for those who are dairy-free, vegan or paleo. This recipe is also used on several other recipes, including:

Vanilla Bean Cassava Crepes with Strawberry Chia Jam

Molten Chocolate Cake with Coconut Whipped Cream and Pistachios

Cashew Date Shake

I’ve made this recipe numerous times and here’s the biggest tip I have for you. If your coconut milk doesn’t separate or the cream doesn’t harden, even after several days in the refrigerator, it could just be a dud can. I’ve found that some brands are more successful than others (I always use this brand), but even then, I’ve still gotten a dud every once in a while. When I make this recipe, I always put two cans of coconut milk in the refrigerator, just to have a back-up.

So what did you think? Did you like the video? I’m hopeful that my video skills will continue to improve and I have to chuckle at saying this, but I’m actually excited to create more. The video chasm has been crossed! If you liked the video, can do me a HUGE favor and click the YouTube button on the bottom of the video and subscribe to my YouTube channel? It’ll help my fledgeling channel grow!

Let me know in the comments below what video you’d like to see next? I’m thinking of making a video for chia seed pudding or homemade nutella or my one-minute mayonnaise. What do you think?

  • Use the coconut whipped cream right away or store in the refrigerator in a sealed container for up to one week.

  1. Marry me? Oh! No, I’m talking to the coconut whip…

  2. Can you use coconut cream instead of full fat coconut milk?

    • Hi Terrie – Unfortunately, no. Coconut cream has too much liquid to solidify into whipped cream while the top cream in full-fat coconut milk is thick enough for the whipped cream consistency.

  3. Excellent recipe! I used it to ice a double layer chocolate cake and then covered it with toasted unsweetened coconut flakes. It was to die for!!

  4. If the coconut milk in a can won’t firm up, does it help to put it in the freezer? Thanks!

    • Unfortunately no. If it’s not firming up it’s because there’s not enough of the coconut cream/fat together. Once you were to bring it back to room temperature it was go instant liquid again. Make sure you’re buying full-fat coconut milk. And sometimes certain brands can just be finicky. :)

      • Yea, I opened it and tried to make it just now and no luck it was all mixed together. (Like the milk and the water) and had only a little on top. It does not say low fat or full fat. Goya is the only brand the store sells that I go to. I guess I will have to search around for your brand or get it on Amazon. Thanks, Lisa!

  5. Just watched the video — will try this and report back with results.

Thank you for the easy and delicious vegan options!!

  6. This looks amazingly delicious. Cannot wait to try it: transitioning to semi-veganism and recipes like this will truly help me out. Dairy has caused me issues for years, I generally do not consume it, but because of a lifetime of eating it, emotionally still tied to meals like cereal, coffee w/creamer, etc. Thank you for figuring this out for the rest of us: saves me the ‘lab’ and experimenting time, if you will. :-)
