This Cajun sheet pan sausage and vegetables is one flavor-packed dinner! Plus, it comes together in a pinch. Just toss everything with my homemade Cajun seasoning and let the oven do all the work.

Thank goodness for sheet pan meals! It’s the kind of cooking I look forward to on nights when I’m feeling a bit tired and unmotivated. And especially this one, as it couldn’t be easier with just 5 ingredients and minimal cleanup! My Greek sheet pan chicken is one of the most loved recipes in this community of Downshifters, but if you’re looking for a spicier, smokier flavor profile for your sheet pan dinner, this recipe has your name all over it. Here’s what else you’ll love about it:
- It’s got a kick of spice. Between the Cajun seasoning and the smoky, spicy Andouille sausage, it’s everything l love about Southern comfort food. If you love the flavor of Jambalaya, you’re sure to love this recipe as well.
- It’s extremely flexible. Sheet pan dinners are one of my favorite ways to use up leftover vegetables. And while I’m using green beans and yellow bell pepper, I’ll share a few easy substitutions below.
- It’s perfect for meal prep. This meal checks all the boxes—protein, fiber, and carbs in one dish. And if you’re feeding a crowd, just make a double batch!
Cajun Sheet Pan Ingredients
- Potatoes: I’m using white potatoes, but feel free to use Yukon gold potatoes. Just make sure they’re cut no larger than ¾-inch pieces. This is super important! Otherwise, they won’t be fully cooked in 30 minutes.
- Andouille Sausage: Some brands can pack in more spicy heat than others, so make sure to check the label or ingredient list for chili peppers if you like spicy (or want to avoid it).
- Other Vegetables: Complete this sheet pan with yellow onion, bell pepper, and green beans.
- Cajun Seasoning: Skip the store-bought kind and make your own! My Cajun seasoning is incredibly easy to make and can be stored away to make several other Cajun recipes on my website.

How To Make Sheet Pan Sausage and Vegetables
- Slice and chop up the ingredients. Make sure to slice everything to the right size (as mentioned in the ingredient card) to ensure uniform cooking.
- Season and assemble. In a large bowl, toss the potatoes, sausage, onion, bell peppers, and green beans with olive oil and the Cajun seasoning. Then, spread everything out onto a sheet pan. If your sheet pan is overflowing, you can separate it into two sheet pans.
- Roast in the oven. Roast for 30 minutes at 400°F (200°C), or until the potatoes are soft when pierced with a fork, and the vegetables are perfectly roasted.
Ingredient Substitutions
- Use other vegetables. If you have other vegetables on hand that can be cooked in similar 30 minute roasting time, use them! A few of my favorites are zucchini, thin asparagus, or mushrooms.
- Make it vegetarian. Swap the sausage for tofu or chickpeas, or add more vegetables into the mix for a veggie-heavy side dish.
Storage & Make-Ahead Tips
- To store in the fridge: Leftovers will stay good in an airtight container for 3 to 4 days.
- To freeze leftovers: Place leftovers in a freezer-safe container and store for up to 3 months.
- Make-ahead tip: Chop all the ingredients ahead of time and store them separately in the fridge until ready to cook. The next day, toss it all with the seasoning and bake!

Ingredients
- 1 pound white potatoes, cut into ¾-inch pieces
- 12 ounces Andouille sausage, sliced into rounds
- 1 small yellow onion, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 12 ounces fresh green beans, trimmed and cut in half
- ¼ cup extra virgin olive oil
- 1 tablespoon Cajun seasoning
Instructions
- Season the ingredients. Preheat the oven to 400°F (200°C). Add the potatoes, sausage, onion, bell peppers, and green beans to a large mixing bowl. Add the olive oil, and Cajun seasoning, then toss to coat evenly.
- Place on a sheet pan. Spread the seasoned ingredients out onto a sheet pan.
- Cook it all together. Bake the sausage and vegetables for 30 minutes, or until the potato is soft when pierced with a fork, and the vegetables are roasted.
Lisa’s Tips
- It’s really important that your potatoes are not cut larger than ¾-inch pieces. Otherwise, they won’t be fully cooked after 30 minutes. There’s a little bit more flexibility with the size of the onion and bell pepper, but the potatoes MUST be cut small.
- Storage tip: Leftovers will stay good in an airtight container for 3 to 4 days. You can also freeze them for up to 3 months in a freezer-safe container.

Behind The Scenes
The first time I tested this recipe I used 2 tablespoons of Cajun seasoning, and while I like spicy flavor, it was enough to get my sinuses going. 😂 So I reduced the amount to 1 tablespoon which was much better, though keep in mind you can always tweak the amount to your spice preference. I think I also grabbed an extra-spicy Andouille sausage for that version, so it was definitely a double-whammy, lol.

Such a quick and easy recipe with all the flavor. I had your Cajun Seasoning left over from a previous recipe. I think I might try a bit more seasoning next go around. Maybe not the full 2 tbsp, not sure I need my sinuses totally cleared but maybe a bit more than 1tbsp. Looking forward to making again soon.
Haha, yeah, feel free to tweak the seasoning level to your liking. And I found the the spice level on the andouille sausage really makes a difference as well, as it can vary quite a bit.

Personally, when I have seen people mixing up the ingredients with Olive Oil on the tray I have always wondered why they didn’t do that in the bowl first.
That’s usually done to reduce the amount of dishes to clean, but I seem to make even more of a mess doing it that way, haha.
Can you give me an adaptation to the recipe cooking time if I were to use uncooked sausage in your sheet pan meal? Or should the sausage used be cooked ahead of time?

I was able to put this together and cook it on my lunch break today which was awesome because I was able to have lunch fresh out of the oven while also having prepped 5 more lunches to easily enjoy throughout the week.
I did think this tasted a little bland (could have used more than 1 tbsp Cajun seasoning and needed salt!) but I did not make my own blend like Lisa did. I saw Lisa noted she used more while testing and it was too much so I probably just needed to make my own blend like hers to get what I was looking for.
I used chicken andouille sausage and did add 2 links to the recipe so that each serving had 1 link.
Hi Danielle – yes, Cajun seasonings can vary quite a bit in terms of spice level. So if you felt yours was a little bland, I’d recommend making your own blend where you can tweak that spice level. Enjoy!

Love the simplicity of this recipe. The Cajun spice recipe is a home run and can be used on anything. I like my green beans cooked a little more, so next time I’ll do this in my hot air fryer and start the green beans earlier, adding the other items 5 minutes later (10 minutes oven time).

I was gonna make Greek Sheet pan chicken for dinner (another favorite) but forgot to put my chicken in the fridge last night.
This recipe came in my email and I had everything already on hand. I just happened to buy some andouille sausage the other day because it was on sale.
When I saw the email and realized I had everything on hand I knew I had to make this.
I do normally try to make a recipe as-is the first time. But, I feel like sheet pan recipes like this can be whatever you do happen to have on hand.
I did have the potatoes, onions, and green beans. I didn’t have a yellow bell pepper but I did have half a green one leftover. I also had some broccoli I needed to use so I decided why not.
I never really measure veggies for sheet pan meals and I always end up making a lot lol. It made two large sheet pans of food.
I do normally have the homemade Cajun seasoning on hand but I was out and feeling very lazy. I happened to have some Slap ya mama Hot Cajun seasoning so I used that instead of making my own. (So good. Loved the extra spicy kick since I forgot to toss in a jalapeno. I put jalapenos in almost everything hah)
My 24 year old son always stops by in the morning after work and eats whatever I make for dinner the night before.
Between his plate, my small plate, my husbands plate, my 17 year old son, and 17 year old daughter we had no leftovers. I really thought I was going to have to freeze some. I can’t believe two large pans were basically inhaled hah.
I don’t really measure spices either so I’d guess it was probably closer to 2-3 tablespoons of Cajun spice. But, I did have way more veggies than the recipe.
Seriously, make this recipe. Don’t be afraid to add whatever veggies you have on hand.
Sheet pan meals are amazing and go perfectly with a salad. This one is getting a 10/10 in my recipe book and is definitely going in the rotation.

Lisa, this is a very good one pan dinner. I had some skeptics at the start, but requests for second helpings support the five star rating! Ok, so my refrigerator contents forced me to adapt, but I think I kept it somewhat true: did your asparagus for bean substitution, used red onion and threw in cauliflower. I never have the correct sausage so I mixed sweet Italian and smoked kielbasa for the protein. I wish I made more for leftovers.
An idea I did for the skeptics: served with a dollop of sour cream blended with your Cajun seasoning (1T / 1/3 C).
