Meal Prepping for Spring
My spring meal prep is centered around fresh, seasonal produce like asparagus, cucumbers, arugula, spinach and blueberries. With warmer weather and your body craving lighter meals, you can easily create fruity breakfasts, delicious salads and vibrant macro bowls with the various ingredients you’ve prepped.
If you watched my first meal prep video, you know that I’m a fan of preparing ingredients over full meals for maximum versatility and nutrients. So in this weekly meal prep I’ll provide several ideas of what you can make with your prepped ingredients, but remember to have fun with it. Tweak recipes, adjust quantities and make it your own.
Ingredients I’ve meal Prepped for Spring
Included in this seasonal meal prep are 11 ingredients:
- Cashew Milk
- Chia Pudding
- Wild Rice
- Red Cabbage
- Blueberry Puree
- Almond Butter Dipping Sauce
- Lemon Vinaigrette
These ingredients can be combined in numerous ways, but today I’m sharing a few of my favorite meals that I assemble from these ingredients, including:
- Peanut Butter and Jelly Chia Pudding
- Matcha Latte
- Vietnamese Spring Rolls
- Wild Rice and Arugula Salad
- Shrimp, Asparagus and Avocado Salad
- Shrimp Macro Bowl
