It’s citrus season! A perfect time to make this orange, fennel and avocado salad. A salad that bright, tangy, flavorful and loaded with vitamin C.

When you were a kid, remember how excited you’d get at the prospect of going to Disneyland, or the zoo, or something similar? You’d wake up like a wound-up Energizer bunny and be grinning ear-to-ear before you even left the house and piled in the car. Because it was the thought of what was to come – the anticipation and vision you conjured up in your head – that really excited you most.

I’ve been working on my upcoming ebook, Roaming Free, for oh, a little over six months – and that anticipation is crazy palpable. Because it truly is right around the corner. Now, I know I’ve said that for the last couple months…”it’s coming in November”….no, wait “it’s coming in December!”…just kidding…”it’s launching in January!” Ha! *insert foot in mouth*

So lesson learned as an online entrepreneur – never let the cat out of the bag about a project before you know it’s really, really imminent. Because seriously, nothing ever goes according to plan. Design changes, copy changes, life changes….oh lordy, you get the picture.

BUT – this week I’m making the final rounds of edits and working with a web designer to integrate a shopping cart on my website to sell the ebook. Woohoo! So for reals…it’s coming soon! And my excitement is over the moon – I can’t wait to share it with you!

When I’m as busy as I’ve been, I find that I don’t want to spend heaps of time in the kitchen. Who does, right? So I gravitate toward simple meals….and more often than not that means salads. Toss a bunch of ingredients together in a bowl and voila – meal is done! Now, just because something is simple doesn’t mean it’s boring or flavorless. Case in point – this bright, colorful, “wow-worthy” orange, fennel and avocado salad.

Citrus is everywhere at the markets right now – tis the season for citrus! So grab some navel oranges and cara cara oranges and whip up this vitamin C-packed, almost-too-elegant-to-eat salad. The sweetness of the oranges are offset by the mild licorice flavor of the fennel and the spicy sweet of the red onions. And avocados add creaminess that balance the other flavors and provide your healthy fat. To top it all off…a little white wine vinaigrette.

Is the salad simple? Yesiree. But I hope you’ll agree…it’s definitely not shabby.

Orange, Fennel and Avocado Salad

Description

A bright, citrusy and fresh orange, fennel and avocado salad. When it comes to healthy salads, it doesn't get much easier than this!

Ingredients 
 

  • 4 cara cara oranges
  • 4 navel oranges
  • 2 avocado, sliced
  • 1/2 fennel bulb, thinly sliced
  • 1/2 red onion, thinly sliced
  • fennel leaves for garnish

White Wine Vinaigrette

Instructions 

  • Use a sharp knife to cut the skin and white pith off all the oranges, then slice into thin, even slices. Alternatively, you can slice first and remove skin second.
  • Place all the orange slices in a large mixing bowl. Add the thin slices of fennel and red onion and drizzle with the vinaigrette. Gently toss to combine. Add the avocado last, to prevent getting squished during the mixing or add to each plate individually upon serving along with the fennel leaves for garnish.

    1. Hi Ellen – That is correct! The large chunk of carbs in this recipe are the two types of oranges. But it can fluctuate depending on how many orange slices you use in each serving :)

    2. I made this salad in the peak of the heat of summer and was so impressed with the fresh mix of delicious flavours.
      These are ingredients I never thought to try together! The fresh citrus burst of the orange and creamy Avocado work so well together but the fennel bulb is the star of the combination! Definitely a winner 🏆 My husband loved it!5 stars

  3. My sliced oranges did not end up very pretty & I’ve yet to figure out how to extract sliced avocado from its skin & retain sharp edges. No matter, the flavor combo here is tremendous & it’s a salad I will be making more & more often. It’s certainly one I’m going to pack for my shelling adventure on St. Joseph’s island in March (thank you, Roaming Free, for all the inspiration). Thanks again for another amazing recipe. :)

    1. Beautiful! And yes, sometimes avocados can be a bit tricky. I find slightly green avocados peel easier than fully ripe. :) x
