I’m obsessed with KitchenAid’s Vegetable Sheet Cutter. Because I’m gluten-free, I’ve been a fan of spiralizing for years as a way to replace pasta. But the Vegetable Sheet Cutter takes it to a whole new level! Today I’m giving you an overview of the product and sharing my favorite Vegetable Sheet Cutter recipes.
Last year I had the privilege to check out a prototype KitchenAid product. Something that would cut vegetables into flat sheets they told me. Hmm, I thought to myself. My interest was definitely piqued.
KitchenAid knew I was a healthy, gluten-free food blogger and a massive fan of spiralizing. I don’t typically buy gluten-free pasta made from gluten-free flours. They’re just not products I stock in my pantry and I’d much prefer to get more veggies into my diet through spiralizing. Zucchini noodles galore.
Fast forward a month and I flew out to Chicago to check out the prototype Vegetable Sheet Cutter. After 5 minutes of playing with it, my mind was blown. I had recipes ideas bursting out of my brain and I couldn’t wait to put it to use.

A few weeks later I demo’d the Vegetable Sheet Cutter at the Housewares Convention. And to say it was one of the most talked about products of the show would be an understatement. Everyone was buzzing about it. So we shot a quick little video of it, put it up on Facebook and it went crazy viral.
If you’ve been following me for more than a year, I’m sure you remember it. I mean, I sliced a solid 8-foot continuous sheet out of one apple! Though you probably remember me talking about how unfavorable tradeshow lighting is – ha (see Facebook video).
But let’s talk about this amazing Vegetable Sheet Cutter. Because now having used it for nearly a year, I can honestly say I’m still in love with it as much today, as I was back then.
It’s not just a fancy novelty kitchen product that you’ll use once and shelve away. If you’re honestly looking for ways to eat more vegetables and transform traditional recipes into healthy, gluten-free versions – you’ll use this ALL the time.
What can you cut with the Vegetable Sheet Cutter?
You can cut a variety of soft and hard fruits and vegetables with the Vegetable Sheet Cutter. For fruits, you can cut apples and pears. For vegetables, you can cut zucchini, cucumber, sweet potato, russet potato, daikon radish, beets, yuca (cassava) and more.
Instead of making my sweet potato fries or yuca fries, you could make root vegetable chips.
With two blades, both a thin and thick blade, you can vary the thickness of the sheets. But to be honest, I usually use the thick blade as I figure a little more veggie in every bite is always a good thing.
Pro tip: for fruits and vegetables that oxidize quickly (i.e. apples and russet potatoes), soak the sheets in a bowl of lemon water until you’re ready to use them.
What are some Vegetable Sheet Cutter recipes?
I know it sounds cliche to say the recipe ideas are endless. But they truly are. Think of all the ways you might use a tortilla or flat pasta or even dough – because that’s when you can find a creative way to use this product.

- Apple wraps with turkey, avocado, arugula and goat cheese
- Apple PB&J wraps (or with almond butter and chia seed jam)
- Pear wraps with salami and gorgonzola
- Zucchini bacon tomato club wrap
- Apple tarts with cinnamon
- Zucchini lasagna
- Sweet potato lasagna
- Sweet potato chips
- Yuca chips (or any root vegetable chips)
- Daikon radish spring rolls
- Zucchini avocado crab rolls
- Zucchini shrimp hand rolls
- Cucumber spicy tuna rolls
- Chicken enchiladas
- Beef and bean burritos
- Zucchini Breakfast burritos
I haven’t converted the recipes you see in the video into full recipes on this website yet. To be honest, I just whip them up on the fly. But if you’d like to see proper recipes with nutrition information, let me know. I’m happy to oblige.

Wondering if the zucchini lasagna and enchiladas can be made a day ahead (put together, not baked), what do you think, will it hold ok? What about sheets of zucchini & cucumber, can I cut and store to use over a week? TIA
I think both of those would be fine to make a day ahead and keep in the fridge covered. You could probably cut sheets a few days in advance and store in a container with water, but don’t know if I’d store a week in advance.

What temp and for how long did you cook/bake the sweet potato chips at?
I baked them at 250F for about 2 to 2 1/2 hours, flipping halfway through. I’ve found it’s best to bake sweet potato chips low and slow. :)

I made the chicken enchiladas last week. They were delicious!! I used 2 large russet potatoes, cut into 5-7 inch sections. I cooked two large chicken breasts in the slow cooker with some salt, pepper, garlic powder, cumin, and a small amount of chicken broth until I could shred them easily. I mixed that with a can of chiles, a jar of salsa verde, nonfat sour cream (8 oz) and low fat Cabot Cheddar (8 oz), and rolled the chicken mixture in the potato strips. I sprinkled more cheese on top. I baked them at 350 for around 40 minutes (based on a response from Downshiftology on her You Tube video). It made about 24 or so enchiladas. I don’t like cilantro, so I left that and the jalapenos and onions off.
I’m going to make the lasagna tomorrow night. I hope that helps you!

The KitchenAid vegetable sheet cutter is built for KitchenAid stand mixers. And it can be used on any size or model KitchenAid stand mixer. :)
My daughter just recently got diagnosed with some health problems as well as food allergies. She cannot have any grains at all, no dairy, and no egg whites. When I saw this pop up on Pinterest my mind was blown!!! I am so thrilled at the avenues of recipes this will open up! I have the KA spiralizer and I think KA could have made a blade attachment like this for the spiralizer. Oh, that’s right…they wouldn’t make as much money selling just an attatchment. Oh wellll
I have the KitchenAid spiralizer as well and totally hear you that it would be nice if they could’ve just (somehow) added a blade to that. But unfortunately the support mechanisms and movement of the tool are quite different. I think the sheet cutter is still worth the investment though. :)

I do own the KitchenAid spiralizer attatchment and their grater attachment (which was in your vid) and I love them both. I hope the sheet cutter attachments are dishwasher suitable, if so I will explore purchasing one. As a side note, your website and videos are so classy & well done and I have had much success with your recipes. Thank you for all the inspiration and ideas!
Hi Katie! If you have both of those attachments already you’re gonna love the sheet cutter! And the sheet cutter and slicer/shredder work so well together. The main housing is not dishwasher safe (though it never really gets dirty as it doesn’t touch anything), but the blades and everything else are. So you should be good!
