Mango, Coconut and Dragon Fruit Smoothie

This mango, coconut and dragon fruit smoothie is fruity, tropical goodness. Dragon fruit, also know as pitaya, lends a vibant pink color to this smoothie.
I’m trying to contain my excitement with this mango, coconut and dragon fruit smoothie, really, I am. But I feel like I’m about to burst! This smoothie might just be the best thing since, well, the invention of the Vitamix (which you know I’m totally in love with as well).
Long story short, I’ve been wanting to make this smoothie since I got back from Bali a few months ago. When I was living in Ubud, Bali for a month I dined out at virtually every healthy restaurant in the city. I sampled every raw, vegan, vegetarian, paleo-friendly place that existed! I know, hard job. But in addition to satisfying my gastrotourism tendencies, I did it for YOU! Seriously. In fact, it was all in the name of “research.”

Ok, but back to the recipe. There’s an awesome restaurant in Ubud called Sari Organik (also known as Warung Bodag Maliah), that’s smack dab in the middle of rice fields. In order to get there, you take a 15 minute walk from the main road, meandering through gorgeous, green rice fields. It’s about as picturesque as it gets!

Sari Organik is known for it’s delicious, healthy and organic food (in addition to that stunning view). It’s also known for it’s crazy good smoothies! I remember trying a few different ones (like the avocado one in the pic), but fell in LOVE with one that was a combo of papaya, mango and dragon fruit.
But bummer, I don’t have any papaya on hand at the moment, so I decided to recreate it as a mango, coconut, dragon fruit smoothie. And wowzers – it’s good!
If dragon fruit (also known as pitaya) is not easy to come by where you’re at, I highly recommend purchasing some pitaya packs online. Pitaya has superfood qualities similar to acai with little seeds similar to kiwi fruit. And you might as well order a big batch, so you can make my Pitaya Smoothie Bowl recipe.
This coconut, mango and dragon fruit smoothie does take a little more work because you have to clean your blender between layers, but trust me, it’s worth it. It might even magically transport you back to Bali. Ok, not really…so you might as well just book a ticket!
- Place the mango, half of one frozen banana and ½ cup coconut water in a high powered blender. Blend until smooth and divide between two glasses.
- Quickly wash your blender. Place the coconut cream, ¼ cup coconut water and half of one frozen banana in the blender. Blend until smooth and pour into the glasses on top of the mango layer.
- Quickly wash your blender. Place the pitaya, ¼ cup coconut water and half of one frozen banana in the blender. Blend until smooth and pour into the glasses on top of the coconut layer.
- Serve immediately
