I can’t believe I’ve been in my new place over a month already. I’m definitely not close to being settled and the next couple of weeks are super busy with back-to-back tradeshows. The first is Natural Products Expo West in Anaheim, a foodie paradise, and the second is the International Home and Housewares Show in Chicago.

Because I’ve been so busy (and not taking much of my own “downshifting” advice), I’ve been gravitating toward fast and simple meals. Like one bowl or one pan meals. And even though I sometimes like to make meals all fancy schmancy, this is the true me. Simple, easy and flavorful (with hopefully not a lot of dishes to clean up afterwards).

This BLT salad is one of those meals. It tastes spot on like a traditional BLT sandwich, yet has no bread and is crouton free. There’s no need to modify something to be gluten-free when it just naturally is. Ahh, love that.

The base of the BLT salad is romaine lettuce, cherry tomatoes and bacon – your basic BLT components. To jazz it up a bit, I’ve added some radish sprouts, but you could also use any sprouts or micro-greens on hand.

While the bacon cooks in the oven, roughly chop the lettuce, slice the tomatoes in half, slice a green onion and peel and dice an avocado. Let the bacon cool, then crumble it into the bowl and toss it all together with an easy mayo dressing (which uses my homemade mayonnaise recipe).

This BLT salad is pretty, easy and delicious – and my brother gave it the thumbs up when he popped by for lunch this week. His office is literally one mile from my new apartment and he’s getting quite savvy at knowing the days I’m doing recipe testing. Smart man.

BLT Salad with Avocado and Sprouts

Description

This BLT salad tastes just like a BLT sandwich. It's fresh and tasty!

Ingredients 
 

  • 1 head romaine lettuce, roughly chopped
  • 2 cups cherry tomatoes, halved
  • 8 slices bacon, cooked, cooled and crumbled
  • 1 green onion, finely sliced
  • 1 cup radish sprouts
  • 1 avocado, peeled, pitted and sliced

Mayonnaise Dressing

Instructions 

  • Add the romaine lettuce to a large salad bowl. Top with the cherries, avocado, bacon, sprouts and green onion. 
  • To make the mayonnaise dressing, combine all ingredients in a small bowl and whisk together. 
  • Drizzle the salad with the mayonnaise dressing and toss to combine.
